Slightly more candied than Fabbri, less cloyingly sweet than Toschi, not as difficult to find in stock as TraderJoe’s Amarenas, more supple in the manner of a crisp bite of fresh fruit than all of the above. Fabbri, while possibly the most balanced flavor-wise of these Amarenas are all too often mushy. My evening cocktail is either a dry gin martini or a rye Manhattan. For my Manhattans (3:1 rye:vermouth) I add a teaspoon of Amarena syrup. Rex’s syrup is excellent. The fruit snap when I’m done makes the whiskey-flavored cherry a treat on exit. For the price-point it’s certainly the best Amarena, if not the best at any price point. A true bargain garnish for those who care exceedingly about crafting a satisfying evening cocktail.

I intentionally omitted Luxardo and Tillen Farms, etc. They are maraschinos (marasca cherries) if that’s what you prefer. Tillen Farm’s Bada Bing cherries are also good, in a different class, and leaning towards the tartness of an Amarena. Nevertheless, I do find find these a tad too sweet for my Manhattans.

I bought the 35oz size, which is a lot of cherries. I drain the thick syrup using a strainer and give a quick rinse with cold water. The cherries are then placed in a pop top container, covered with brandy, and kept in the refrigerator. I see no reason for buying the more expensive brands. These have a good flavor and are firm. They continue to maintain their taste after 6-8 months in th refrigerator.

Although the quality of the cherries appears to be the same, the syrup is darker and not as subtle. We did a blind taste test with my family and hands down everyone preferred the Fabbri brand. These however, did taste good in a recipe calling for the cherries without much of the syrup. They are less expensive, so in a pinch I would use them again.
